Beef is expected to be available for pick up / delivery and home devouring near the end of October.

Freezer Space/Animal Size
35-40 lb. per cubic foot (cf).
More than an eighth will need a chest or stand up freezer.
Some beefs are bigger than others yielding more meat; they have excellent marbling and tenderness at any age or size!
Packaging makes it easy to split quarters, halves or a whole among family & friends.
Whole or Half Beef: When you order an entire beef or a half, you can choose how you want your beef in types of cuts, packaging, and lean/fat ground beef. Halves are cut and packaged at the same time and to the same requirements. If you prefer roasts over steaks or minimal roasts, you can pick it! If you order a whole, you can have each half cut differently! A half beef will need about 6 cubic feet of freezer space.

Quarter: When customers order a quarter, the processor cuts a half as a standard (see next section). The half is cut and divided equally as two quarters. Certain cuts are only offered in certain quarters such as flank and tri-tip; you'll need to indicate preference and we'll try to accommodate your choice.
Eighths: Good way to get some prime cuts and burger. Should fit easily into a standard kitchen fridge/freezer. Cuts such as filet may be unavailable.
A quarter will contain steaks cut to 1 inch thickness and packaged individually;
roasts of 3-4 pounds; and burger & stew meat in 1 lb. packages.

Organ meats such as liver, tongue, and heart are available to those ordering at least a quarter, at the proceesing cost of $2/lb. AND bones for $1/lb.
^Burger: Our ground beef is right around 90% lean (90/10) when we order a standard quarter cut. If ordering a half or whole, you can have the % of fat / lean in your burger to your specs (80/20, 85/15, 90/10)
We have found it to be delicious on the grill, in a cast iron pan, or cooked into other delicious recipes.
Returning customers receive a .10/lb. discount and free goodies.
Our meat is processed in Westcliffe and we offer pick up from the processing facility or we can deliver directly to you! Weekdays only. Expected at the end of October.
We deliver to many of the local towns and larger cities but do need to find common dates for customers in order to deliver effectively. Let us know your interest and we'll see if we can deliver to your area or meet somewhere in between.
